2-Ingredient Chocolate Soufflé w/ Birch Syrup Macerated Strawberries

Serves 2

Ingredients

Soufflé

  • ½ cup chocolate spread
  • 2 eggs, separated

Macerated Strawberries

  • 2 cups strawberries, hulled and roughly chopped
  • 1 ½ Tablespoons birch syrup
  • 1 teaspoon honey
  • 1/8 teaspoon black pepper, fresh ground

Method

Macerated Strawberries

  1. In a bowl combine all ingredients and stir well to combine
  2. Leave in the bowl and cover, or transfer to a sealable bag
  3. Set aside on your countertop for at least an hour, or transfer to your fridge for about 3 hours, to allow the mixture to macerate and the flavours to mingle

Soufflé

  1. Preheat your oven to 375F
  2. Brush the sides of 2 ramekins with softened butter. Set aside until needed
  3. In a large bowl, stir together the chocolate spread and the egg yolks until well combined
  4. In a separate bowl, whisk the egg whites until stiff
  5. Add roughly 1/3 whisked egg whites to the chocolate/ egg yolk mixture and fold until loosened
  6. Add remaining whisked egg whites and continue to gently fold in until well combined and there are no white spots in the mixture
  7. Transfer to ramekin dishes and place on a baking sheet in you preheated oven
  8. Bake for 17 minutes, until risen. The soufflés will still jiggle in the middle when moved
  9. Remove from the oven and serve immediately with the macerated strawberries alongside
