2-Ingredient Chocolate Soufflé w/ Birch Syrup Macerated Strawberries
Serves 2
Ingredients
Soufflé
- ½ cup chocolate spread
- 2 eggs, separated
Macerated Strawberries
- 2 cups strawberries, hulled and roughly chopped
- 1 ½ Tablespoons birch syrup
- 1 teaspoon honey
- 1/8 teaspoon black pepper, fresh ground
Method
Macerated Strawberries
- In a bowl combine all ingredients and stir well to combine
- Leave in the bowl and cover, or transfer to a sealable bag
- Set aside on your countertop for at least an hour, or transfer to your fridge for about 3 hours, to allow the mixture to macerate and the flavours to mingle
Soufflé
- Preheat your oven to 375F
- Brush the sides of 2 ramekins with softened butter. Set aside until needed
- In a large bowl, stir together the chocolate spread and the egg yolks until well combined
- In a separate bowl, whisk the egg whites until stiff
- Add roughly 1/3 whisked egg whites to the chocolate/ egg yolk mixture and fold until loosened
- Add remaining whisked egg whites and continue to gently fold in until well combined and there are no white spots in the mixture
- Transfer to ramekin dishes and place on a baking sheet in you preheated oven
- Bake for 17 minutes, until risen. The soufflés will still jiggle in the middle when moved
- Remove from the oven and serve immediately with the macerated strawberries alongside
