To share a few perfect picnic salads we welcomed award-winning registered dietitian Sue Mah.
Wonderful Pistachios Carrot and Cilantro Slaw (Recipe by Wonderful Pistachios)
Ingredients
Slaw
– ¾ cup Wonderful Pistachios No Shells Lightly Salted, coarsely chopped
– 4 cups shredded carrots
– ½ cup packed fresh cilantro, chopped
Dressing
– 2 T white wine vinegar
– 2 T extra-virgin olive oil
– ¼ tsp sea salt
– ¼ tsp freshly ground black pepper

Caprese Pasta Salad
Ingredients
Salad
– 2 cups cooked farfalle / bow-tie pasta (or any other small pasta shape)
– 226 grams (8 ounces) mini bocconcini cheese
– 2 cups grape tomatoes, quartered
– ¼ cup fresh basil, chopped
– salt and pepper to taste
Dressing
– ¼ cup olive oil
– ¼ cup balsamic vinegar
– 2 T lemon juice
– 1 clove garlic, minced
– 1 tsp Italian seasoning or oregano
– salt and pepper to taste
Directions
Serves 4-6
Watermelon Salad
Ingredients
Salad
– ½ small watermelon, peeled and cut into cubes
– ½ cup crumbled feta cheese (or more if you’d like)
– ¼ cup fresh mint leaves, chopped
Dressing
– 2 Tbsp lime juice
– 2 Tbsp honey
– 1 T olive oil
– pinch of salt (optional)
