‘Healthy-ish’ baking hacks

Still keeping up with your pandemic baking skills? If not, registered dietitian Shannon Crocker has a few hacks for easy-to-make goodies that are – as she says – ‘healthy-ish’.

Crocker says there are so many decadent and rich desserts around the holidays, so in order to be “healthy-ish” you can add fruit to your baked goods. 

Apple Clafouti

Crocker says clafouti is a traditional French dessert that is like a cross between a fluffy pancake and a custard.

First, you are going to make a batter similar to a pancake batter. Then, you will slice apples and toss them in cinnamon and sugar. Lastly, you are going to layer the apple within the batter in a pan. 

Crocker offered a tip to take the apple clafouti to the next level. It’s as simple as finishing off the dish with a dollop of plain greek yogurt on top of the apple clafouti and sprinkling toasted walnuts and a drizzle of local maple syrup.
