Asparagus Vinaigrette
Yummy on cold asparagus… actually yummy on all roasted vegetables too!
1 T dijon or seedy mustard
1/4 Cup of red wine vinegar…not too strong
1 teaspoon sugar
1/2 teaspoon salt
1/2 C of olive oil
chopped chives and parsley…
Put the first 4 ingredients in a food processor and give it a whir…Add the olive oil in a slow, slight, steady stream..add the chives and the parsley when vinaigrette is blended.
Dress the asparagus about 10 minutes before serving…garnish with grated hard boiled egg…
Fern Kraemer’s Strata Recipe
I have been making this recipe for a long time..it never fails!
Fabulous breakfast dish for lots of people at the cottage too!!
Set your oven for 375 F.
10 slices of bread torn up into 1″ cubes
2 Cups of milk (whole is best but doesn’t really matter)
3/4 lb. cheddar…medium…I use what I have…or mix…gruyere is wonderful mixed in…kinda like a cheese fondue flavour!
6 eggs
Rub butter on the bottom and sides of a 9 x 13 pan. Grate or cube (or do both) the cheese…
Alternate the cheese and bread in layers.. Beat eggs, add milk and a bit of melted butter. Mixes better if eggs and milk and butter are at room temperature. Pour over the cheese and bread. Let stand in the refrigerator over night.
Take out of the fridge about 2 hours before you are ready to put it in the oven. Bake for 45 minutes.
You can add crumbled bacon, or ham, or cooked sausage…anything you want really! Always smells fantastic, looks good and tastes better…and it is so easy!
