The ‘Queen of Cuisine’ at Maple Leaf Foods, Chef Sam (Samantha Lazuric) joined us in our kitchen this morning to show us how to get the most out of our leftovers.
Her ‘All Taste, No Waste’ cookbook features the ‘Use What You’ve Got’ pasta salad recipe which she helped Annette prepare.
Ingredients
1-2 cups leftover protein (e.g. beans, tofu, chicken, bacon), cut into bite-sized pieces
1 cup leftover pasta, couscous or quinoa
½ cup diced tomatoes or halved cherry tomatoes
½ cup chopped or sliced veggies (onions, broccoli, cucumber – whatever you have in the fridge)
½ cup of your favourite salad dressing
1 clove of garlic, minced (optional)
Preparation
Combine all ingredients in a large bowl, and stir well so everything is coated with the dressing.
Give it a taste and add more salt and pepper as needed.
