RECIPES

Salmon

2 6 oz filets
olive oil
Salt and pepper to taste pepper

Maple Cherry Sauce

1/3 cup maple syrup
1/4 cup water
1/2 cup cherries
2 tsp brown sugar
1 tsp soy sauce
1 tbsp lemon juice

Instructions

Pit the fresh cherries Set aside.
In a small saucepan mix together the sauce ingredients and bring to a boil. Lower the heat and simmer, uncovered, for 10 minutes.
Rub salmon filets on both sides with olive oil and salt and pepper.
In a hot grill pan add the salmon and cook on both sides for 2-3 minutes depending on thickness.
Baste each side with the maple cherry sauce to glaze after turning.

Grilled Peaches with Hot Honey and Goat Cheese

1/4 cup honey
2 tablespoons olive oil
1 tablespoon hot sauce
1/2-1 teaspoon
Salt and pepper to taste
4 medium ripe peaches, pitted and halved
3/4 cup crumbled or shaved feta or goat cheese cheese

Instructions

In a small bowl, whisk all dressing ingredients until smooth.
Season dressing with salt and pepper to taste
Preheat the grill or pan to medium heat.
Wash and dry peaches
Slice them in half and remove the pit
Brush the cut side of each peach half with olive oil and sprinkle with salt and pepper
Grill, cut side down, for approximately 5 – 7 minutes.
Peaches are cooked when warmed through and caramelized on the cut side, with grill marks.
Place grilled peach halves on a plate, cut side up.
Drizzle dressing over grilled peaches
Top with shaved or crumbled feta or goat cheese
