2 Grey Cup Festival Tailgate Party recipes from chef Corbin Tomaszeski

We kicked off Grey Cup Festival week with our very own Morning Live Tailgate Party! This morning we welcomed Chef Corbin Tomaszeski who shared two tasty recipes that are perfect for watching the game.

RECIPE # 1 – Grey Cup Skillet Nachos

Yield- 4 servings
1 bag ready made crispy tortilla chips
1 ½ cups mixed shredded cheese
2 whole tomatoes- diced small
½ lb cooked spiced ground beef
¼ cup sliced green onions
3 tbsp. chopped black olives
¾ cup sour cream
¾ cup ready-made salsa
Turkey Topping
4 tbsp. olive oil
1 small onion, chopped fine
2 cloves of garlic minced
½ LB lean ground turkey
2 tbsp. hot pepper sauce
2 Tbsp. taco seasoning mix
Serve & Garnish with:
-chopped green onions
-sour cream
-guacamole
-tomato salsa of choice

Method

Cooked Turkey – Preheat large skillet with the olive oil. Sauté the onion and garlic over medium high heat for 4-5 minutes or until golden brown. Add the ground turkey to the onion and garlic mixture and continue to cook until the turkey is well done. Remove the turkey mixture from the heat and season with the taco seasoning mix and hot pepper sauce. Adjust seasoning with salt and pepper if necessary. Set aside the cooked meat.

Nacho Assembly

Place the Tortilla chips into a medium sized Cast iron skillet. Evenly spread the cooked ground turkey mixture over the chips. Layer the beef with the shredded cheese, diced tomatoes and chopped black olives. Place the pan into a preheated 350-degree oven for 5 minutes or until the cheese begins to melt. Remove the pan from the oven and garnish with the sliced green onions and serve.
Serve with the sour cream and salsa.

 

RECIPE # 2 – Yield- 4 portions

4-pieces of 6oz raw chicken breasts –cut into 1 inch cube pieces
1 large egg – beaten
1-½ cups crushed mixed vegetable terra chips (should resemble coarse oatmeal)
½ tsp. chili powder
pepper to taste

Method

Skewer the raw chicken pieces onto soaked wooden skewers. Brush each chicken skewer with beaten egg. Combine the chips with the pepper and chili powder and sprinkle them on all sides of the skewered chicken pieces. Place the skewered encrusted chicken onto a parchment lined baking tray.
Pre-heat oven to 350-degress and bake the chicken strips until cooked through- approximately 15 minutes.
