It’s strawberry season in Ontario! Foodland Ontario home economist Teresa Makarewicz shared two delicious ways to prepare field strawberries.
Thai-Inspired Chicken and Strawberry Salad
1. In shallow bowl, mixed salad greens. To them. add: strawberries along with greenhouse cherry tomatoes and cucumbers, green onion and greenhouse yellow pepper; toss.
2. Top with grilled sliced chicken breast (grill extra chicken to have on hand to add to salads, wraps, pasta…) fresh mint and chopped peanuts. If you like, turkey will make a delicious option.
3. Drizzle some of the dressing (the dressing will be made ahead: lime, fish and soy sauce, sugar, crushed red pepper flakes and garlic – flavours of Thailand).
4. A refreshing summer delicious main dish salad. Great for those hot summer nights.
Strawberry Sangria
1. In glass pitcher, Ontario white wine, orange liqueur, white cranberry juice and sugar; chill. (make ahead)
When ready to serve, simply add the strawberries and if you like a splash of lemon or lime sparkling water.
Tip: Make fruit ice cubes, place 1 strawberry into ice cube compartment and add mint too if you like.
