Ready for the most delicious grilled salmon ever? That’s how registered dietitian Shannon Crocker described the dish she cooked up for us this morning.
Fusion Grilled Salmon (Recipe Courtesy of canolaeatwell.com)
1/4 cup canola oil (60 mL)
2 Tbsp sodium-reduced soy sauce (30 mL)
2 Tbsp fish sauce (30 mL)
1 tsp granulated sugar (5 mL)
1 clove garlic, minced (1)
1/2 tsp fresh ginger, minced (2 mL)
1 tsp Thai chili sauce (5 mL)
6 (4 oz/125 g) salmon steaks (6)
In a re-sealable bag, add canola oil, soy sauce, fish sauce, sugar, garlic, ginger and Thai chili sauce. Add salmon steaks. Marinate for 2-4 hours. Turn at least once.
Grill steaks for 3-4 minutes per side or until fish flakes easily. Serve with ½ cup (125 mL) Fruit Salsa (recipe follows).
Fruit Salsa
1 mango, cubed (1)
1 avocado, cubed (1)
1 tomato, finely chopped (1)
1 green onion, thinly sliced (1)
1/4 cup red onion, finely chopped (60 mL)
Juice of one lime (2 Tbsp/30 mL)
2 Tbsp canola oil (30 mL)
3 Tbsp each chopped cilantro and mint (45 mL)
¼ tsp salt (1 mL)
¼ tsp ground black pepper (1 mL)
In a bowl, combine mango, avocado, tomato, onions, lime, canola oil, cilantro, mint, salt and pepper. Refrigerate.
