Chestnut Bundt Cake with Maple Butter Drizzle
12 servings – Prep 15 minutes – Cook 40-50 minutes
This chestnut Bundt cake is soft, nutty and delicately sweet, with the natural earthiness of chestnut flour. Crowned with a rich maple butter drizzle that seeps into the ridges of the Bundt, adding warmth and a glossy finish.
Ingredients
11/2 cups all purpose flour
1/2 cup chestnut flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon, ground
1/2 cup (115g) butter, softened
1/2 cup (120g) grapeseed oil
1 cup brown sugar
3 large eggs
1/2 cup milk
1/2 cup (120g) sour cream
1 teaspoon vanilla extract
Maple Butter Drizzle:
3 tablespoons (42g) butter
1/4 cup (60g) maple syrup
1/4 cup powdered sugar
pinch of salt
Instructions
Preheat the oven to 350°F 175ºC). Thoroughly spray Bundt pan with non-stick baking spray to ensure that every crevice is covered.
Sift the dry ingredients: flours, baking powder, baking soda, salt and cinnamon, in a medium-sized bowl.
Using a stand mixer handheld fitted with paddle /whisk attachment, beat the butter and oil on high speed until smooth in a large bowl. Add sugar until creamy. Beat for 2 minutes.
Add the eggs one at a time, beating well after each addition.
Add vanilla extract.
Gradually add the dry ingredients to the wet ingredients in three parts, alternating with the milk and sour cream. Begin and end with the dry ingredients. Mix until just combined.
Pour the batter into the Bundt pan. spreading it evenly.
Bake for 45-50 minutes, or until a toothpick inserted into the cake comes out clean.
Let cool.
Maple Butter Drizzle:
Melt the butter over low heat in a small pot.
Whisk in the maple syrup and salt.
Remove from heat and whisk the powdered sugar until smooth.
Drizzle over cooled cake.
Tip: Chestnut flour cakes are moist and delicate. Generously grease every ridge of the Bundt pan, to ensure it releases cleanly and beautifully.
