Red Prince apple muffins drizzled with caramel sauce

We are heading into the kitchen today with Chef D as he is making some delicious muffins using Red Prince Apples.

Recipe:

Red Prince Apple Muffin

4Tbsp melted butter
2 Red Prince apples Diced skin on
2 tbsp Brown Sugar
¾ tsp Cinnamon
2.5 cups Flour
2.5 tsp Baking Powder
¼ tsp baking soda
½ tsp salt
1 cup Sugar
2 large eggs
¼ vegetable oil
½ cup orange juice
½ cup full fat sour cream
1 tsp Vanilla

Preheat oven to 350

Whisk Flour, baking powder, baking soda, salt, Brown sugar, white sugar, cinnamon. Set aside
In a separate bowl whisk, butter, oil, sour cream, orange juice, eggs, vanilla
Slowly stir diced apples in flour mixture.
Combine dry and wet ingredients mix well
Spoon mixture in to greased muffin Cups.

Bake for 18 to 22 minutes

Carmel Sauce

1.5 cups brown sugar
2 tbsp Vanilla
½ cup water
2 tbsp Dark Rum
1 cup 35 Cream

In a tall side saucepan over medium high heat. Bring Sugar, water, rum, and Vanilla to boil. Reduce until all the liquid is evaporated. Slowly add Cream and bring to a gentle boil for 2-3 minutes.
