No-Bake Lemon Bar recipe perfect for summer

No-Bake Lemon Bars

Prep: 15 minutes
Chill: 2-3 hours (or overnight)

Ingredients
Graham cracker base:
½ cup butter, melted
¼ cup sugar
1 ½ cups graham crackers, crumbs
1 lemon zest
Lemon filling:
8oz cream cheese, softened
400ml condensed milk, sweetened
½ cup lemon juice, fresh
1 lemon zest
1 teaspoon vanilla extract

Instructions:
Line the bottom and side of an 8×8 inch glass square baking dish with parchment paper.
Graham Cracker Base:
Mix the butter, sugar, graham cracker crumbs, and lemon zest until combined.
Press evenly into the prepared baking dish.
Chill in the freezer while preparing the filling.

Lemon Filling:
Using a stand mixer/handheld fitted with a paddle/whisk attachment, beat the cream cheese on high speed until smooth in a large bowl.
Add the condensed milk until well combined.
Add the lemon juice, zest, and vanilla extract.
Mix until thick and creamy.
Pour the lemon filling over the chilled crust and smooth the top.
Cover and place in the fridge for at least 2-3 hours, or overnight for best results.
Lift the overhand parchment paper out of the dish.
Garnish with lemon zest or whipped cream and cut into bars.
