Four healthy meals with little ingredients

It doesn’t take a lot of ingredients to put together a really healthy meal. Registered dietitian Shannon Crocker shows us four of her favourites.

Crocker teamed up with a website called Cart2Table.ca which aims to help people with type two diabetes to rediscover the joy of food with easy recipes, tips on portion sizes, healthy convenience food and more. 

Eggs

Crocker says eggs are a great convenience food because they contain protein which helps manage blood sugar levels. She says frittata is a quick, easy and delicious recipe which utilizes eggs. 

Leafy Greens

Crocker recommends people eat leafy greens regularly if they can because they are a low carb, low calorie vegetable. They are also packed with nutrients for heart health. She says you can mix leafy green directly into the frittata mentioned before and top it afterwards too. 

Canned Beans & Whole Grains

Crocker says beans are filled with fibre, which helps to slow down digestion and slow down blood sugar spikes. 

Whole Grains 

She says grains are also a great source of fibre. She recommends putting them both in a salad jar along with additional vegetables such as tomatoes and greens.
