Barrel Heart Brewing is taking a wine approach to their brewing.
Emily Vukovic visited the brewery in Ancaster who uses old wine barrels to produce their beer; a method that takes 1-3 years to produce, while most beer takes 1-3 weeks.
The beers are not hoppy, but have notes of floral, citrus, oak and fruit, depending on what owner and brewer Mark Horsley feels like blending together.
Each bottle also has a poem on the label that is written by Mark and describes what the beer tastes like, or should transport you to while drinking it.
All saisons from Barrel Heart are to be drank out of a wine glass or tumbler as a nod to the wineries they take their inspiration from.
Barrel Heart Brewing has a taproom where you can enjoy a glass and pick up bottles, or you can visit them at the Ancaster or Dundas Farmers Market.
