Paleo Christmas eating

The holiday season is in full swing and eating right can always be a challenge.  B.J. Stewart has just released her second paleo cookbook and she joined us with some great seasonal recipes.

Black Forest Chews Recipe

Prep Time: 10 minutes
Yields: 5 to 6

  • 1/4 cup dried cherries (no sugar added)
  • 6 dates
  • 1/4 cup walnuts, roughly chopped
  • 1/4 cup unsweetened coconut
  • 2 tbsp chocolate protein powder
  • 3 tbsp pure maple syrup
  • 1/4 tsp almond extract
  • Dash of sea salt

Soak dried cherries and dates in warm water for about three minutes to soften.

Drain and discard the water.

In a food processor, place all the ingredients and pulse a few times to incorporate.

Continue to process until a dough ball forms in the bowl.

Form dough into one inch balls.

Store in the refrigerator for whenever you need a post-exercise snack or an energy boost.
